Ingredients:

• 1 oz Ume

• 1/2 oz gin

• 1/4 oz lemon juice

• 1/4 oz simple syrup

• Sparkling wine

• Lemon twist

Directions:

1. Add all to shaker except sparkling wine.

2. Strain into coup or champagne flute.

3. Top with wine.
