Pineapple & Mint Iced Tea

Ingredients:

  • 1 Pineapple

  • 3-1/2 cups water

  • 1 oz fresh mint

  • 2-inch piece of fresh ginger

  • 4 oz agave syrup

  • 2 tbsp fresh mint

Directions:

  1. Prepare the pineapple by cutting pineapple into 3/4-inch cubes.

  2. Pour water into a large saucepan.

  3. Add cut pineapple (save 8 pieces for later), mint and ginger.

  4. Stir in agave syrup and place over medium heat.

  5. Simmer for 45 minutes or until liquid reduces in half.

  6. Remove from heat and allow to cool completely (about 4-5 hours).

  7. Strain mixture.

  8. Add ice and 2-3 pineapple cubes to a chilled glass.

  9. Stir in mixture.

  10. Garnish with mint and pineapple leaves.
